The best gank ships is Minmatar Tempests, isk/gank wise, minmatar ships are best due to biggest alpha of all ships in game, you won't get a chance to shoot one more time in 1.0-0.9 systems. With T2 weapons and damage mods it shows 11k volley at once and 1500 after that, when torpedoes will get to the target(and IF they will). The problem with freighter ganking is quanlity of ships you must bring and fire at target at once - against Charon it is 15 battleships 108 mil isk each, discount insurance paiment. But it is still fifteen people.
EDIT: Overall, Apocalypse/Armageddon with arties put on it seem to be more frequently used for gank than Tempest. Reason is that eight guns from Apocalypse will do more damage than six bonused guns from Tempest(6 * 1.25 = 7.5), and you don't need battleship skill more than 1 for it. And Armageddon have only seven turrets, but cost more like battlecruiser.
Simplist answer here you can not Gank a Freighter Solo in Hi-sec unless you happen to be war deccing the corp the freighter belongs too...
Even in 0.5 security space you will get no more than 5 salvo's off before Concord comes and ruins your day.
Concord intervention will result in lots of ISK going bye bye before you even get to the Freighters Structure.
I will take that Charon above, a well trainned Freighter pilot gives some 180,000 EHP from a Charon, it's nearly all Hull tank, so resists are a mute point.
To Alpha that even at Serkers Tempest set up with 11K volley (which assumes you all get direct strikes) that's 16.4 Tempests, which to be safe would need to be 17.
Also I would think you would struggle to fully T2 fit a Tempest for only 108M with Burst Collision Rigs to maximise damage etc.
Bottom line, Ganking a freighter is very much about planning, observing a target sometimes for days/weeks. Picking out routes, scanning the ship with ship scanners to see what cargo he usually hauls, seeing if he has an escort, or if he(she) afk's a lot or pilots himself. work out every detail first, because its a lot of collective isk to waste to find out he was carrying 500 units of ice and a shuttle.

Minmatar ships fitted with Artillery make the best gank ships - load the biggest artillery on the ship as you can, fill the low slots with damage mods, and medium slots with shield extenders. You'll only need a few rounds (10 at the very, very most), so it's worth getting faction ammo for that little extra. Throw some drones in too. Make sure to get insurance!
What class of ship depends on how many people you've got - typically Battleships are used for freighters, and cruisers or destroyers (the Thrasher is excellent) for anything smaller.
Don't listen to trolls/haters/flamers - pirating/ganking is a legitimate way of playing the game. If someone hates on you for it, tell them to fit a stronger tank ;)
Buy the most expensive ship you can fly, load it with the most expensive mods and T2 rigs, load one round of T1 ammo into one gun, then shoot it at a Charon outside Jita 4-4. Then learn how to play the game without being a dick pirate.
