Bear in mind carriers are not limited to using fighters - sentry drones and standard heavy/medium/light drones aren't large, so carrier pilots often carry a variety of types for different engagement profiles.
In terms of DPS: Lots, essentially. Those fighters can put out a considerable amount of DPS, as far as raw numbers go you could easily spec this in EFT/pyFA and have a look.
Carrier hulls are not that expensive, ~650-700mil; even cheaper if you build it yourself inside a pos. Compare this to the price of t3 ships often used to solo c3 wh sites. Carriers should be seen less as capital dps platforms (that's what dreads are for), and more as cap logistics ships that can also do dps.
A cheap way to do sleeper sites in a carrier is to use t1 large drones. The sleepers will kill a LOT of drones, but t1 drones are dirt cheap and carriers can hold hundreds. Carriers are also insurance against pos bashing gangs. Triage carriers can bring a pos out of reinforcement real quick, so you have to worry less about roving gangs hitting your pos while you were sleeping.
Carriers do anything from 700dps upwards (assuming 14 fighters), much more if you fit drone control units to allow more fighters. I wouldn't recommend DCU's in general; fitting capital logisitcs modules is a far better idea. Carriers are primarily support ships and should never operate alone. Thanatos does more damage than other carriers because they have a fighter damage bonus; but a weaker tank.
You don't necessarily have to bring your carrier to a sleeper site to use its fighters. They can be assigned to any other ship, and will attack whatever the ship attacks, and follow in warp.
A Carrier can solo C3 site easily.
Some carebear noob corps build carriers in WH not for their effectiveness, but for they can do it relatively "safely" (at least they think it's safe). Sometimes noobs want to fly carriers just because they're big and look cool.
btw Carriers have much more value in C5-C6 space, because they're great as repairer and their fighters help us with solid DPS. Additionally they can trigger extra-sleeper-BS-pop in WH site (http://wiki.eveonline.com/en/wiki/Wormhole_space#All_Sites_In_Wormhole_Space), so can squeeze extra ISK out from the site.
The reason for building carriers or other cap ships in low WH space is it lets you get the leg up on any invaders. The biggest C1 wormhole can take 500M kg. This prevents anything larger than a BS to enter it through the wormhole. If you build a carrier in the wormhole, you can fairly easily force anyone who comes in (at least from empire) out. Many time wormhole invasions and oustings are question of who can build cap ships in there first.
