If I created a 1 man corp and, after 7 days, I then placed a POS in highsec (because my standings are good with the highsec faction), can I take the ownership of that POS with me if I close the corp or change to a different corp?

As I understand the mechanics (and find in the forums), no.
The POS belongs to the corp - not the person. Closing a corp will leave the POS running, owned by the closed corp but otherwise inaccessible.
