On advanced drone control.

What's the difference between "guard" and "assist".

If I tell a sentry drone to assist a fleet member, who then shoots at something out of my drone control range, will the drone shoot at the thing even though it's farther away from the target than my drone control range?

Guard will make drones attack whoever attacks your fleetmate. Assist makes them attack the next target they cycle offensive modules on.

I don't have personal experience with it, but my corp mates have said that a sentry drone will not attack anything that is not in your drone control range, even if the target is within the sentry drone's own range.

For completeness, see Blind Philip's answer for the first bit.

I believe you are correct. Sentries will not attack anything outside the control range even if the target is within the drones optimal+falloff rage. This is why you need to increase drone control range on sentry sniping ships.

If you are in an Ishtar, for example, you can drop Warden Bouncers or Curators outside your drone control range of the target. Then fly to inside your drone control range and engage the target with the sentries that are still distant from the target. Also the Drones will still aggro on aggression to you even if the aggressors are outside of your lock range but inside your drone control range(given they aren’t already firing at something).

Basically, assuming both the target and the drone are within your control range AND the target is within the drone’s weapons range, the drone can shoot at the target, correct?

Guard - As above, Ships that start offensive action against the pilot being guarded will be attacked by the drones.

Assist - whatever the person being assisted attacks will be attacked by the drones - yes as per as in the comments above Sentries will only assist within their own range. Also I have noticed (as a tackle interceptor pilot who often has many drones put on me to assist) that some offensive mods will not trigger the drones to assist. Guns certainly do but I have noticed that pointing/scrambling doesn't always seem to trigger it.
