Roles or Grantable Roles?

I have absolutely no doubt the difference is so obvious is might as well have run up and hit me in the face with a base ball bat, but I can't see it.

What exactly is the technical difference between regular corp roles and grantable roles? And, in the case that is does lead where I imagined, why would you chose one over the other, in a small corp?

A role allows you to do something within that context.

A grantable role means the owner of said title can give other Corp members this role too. They can also remove it from corp members too.

You may choose a grantable role so that a Recruitment Officer could have the ability to give a new member a certain role without having to make said recruitment officer a director. So for me, in the ocntext of your question, Corp Security.

NB: I did/do all of my stuff using roles bundled into titles ;-)
