I've been doing missions for awhile now and I was wondering if there's anyway to see standing more accurately. I had trouble at one point when I had 5.0 standing but I couldn't anchor a POS. I also wonder if there is any way to predict the standing gain from completing a particular mission.

This is a complicated topic - first question is are you in a player corporation?
If not then you cannot raise a POS at all.
Second question: Is your standing to the faction that controls the space where you want to raise the POS at 5 or is it your security status?
In any case it is your corporation's standing to the faction that controls the space where you want to raise the POS that counts.

I am in a corporation and I do have standing of ‘exactly’ 5.0 with the Amarr empire. However, according to a CCP GM my true standing is just below 5 and rounded up to 5 for ease. I did raise my standing and was able to anchor as planned.
Which leads to my second/tertiary question, is there anyway to make an accurate prediction of standing gain from a mission?
I know that there are fixed percentage gains from Cosmos missions so it would stand to reason that there would be for normal missions too. The net effect won’t always be the same due to the way the percentage is applied and your social skills.
