POS checking (for "running out of fuel" alerts), evemail checking (for "be prepared for war targets when logging on" warnings), plus whatever else you can grab from EveGate (such as sync with the calendar?)

I'd like to see it released for other platforms, not exclusively for the IPhone.
An Android version would be a good start.

Biggest two are item database (coming I believe) and eve mail once eve gate is out.
After that it would be great to be able to jump to a web link without exiting capsuleer and return directly to capsuleer in the same spot I was once finished browsing the link. This would be great for expanding the utility and ease of all the blog roll discussions

For me, "time to complete training" for some back of the envelope planning for untrained skills/ skills not in queue.

EVEmail when EVEgate becomes available, with the ability to read, reply, label, and sort mail.
Also, would like a star chart tool. Slecet which systems to monitor and information is provided about those systems. This way I can monitor my systems and my enemies' systems.

A great addition would be the ability to see how long not-yet-bought skills would take to train with one of your characters, with a breakdown by level (as is already available with skills you do own). Aside from that, eve-mail and the ability to see you address book (ie, who is currently online in your corp) would be awesome. Oh yeah, and of course the ability to read KB entries without closing capsuleer.

As for the fitting tool mentionned above, wouldn't it be too clunky to have that on the iphone? On the other hand, I can imagine myself playing with a fitting tool on the iPad. I think there is one coming for the Mac: the guy that does the Mac EVE Tool. Maybe they could work together as it's Objective-C/Cocoa in both case.
