Darina has given a good response.
I flew my hulk continually through the second hulkageddon without any problem at all using similar route as Darina above and planning ahead.
Never AFK mine during Hulkageddon and fit your ship to maximise tank rather than cargo capacity.
Watch local and if it suddenly spikes head off to your safe spot.
If you are visited in the belt by any ship which looks out of the ordinary, change belts as soon as they have left just in case they are bookmarking your position for a nearby gank fleet.
Fit a cloak to your orca which can stand off from the mining fleet and tractor cans up as required and then recloak.
Check Dotlan for recent kills before starting mining op.
Drop down to a covetor if concerned about loosing the costly hulk.
Use common sense and stay away from known heavy mining systems including ice.
Stick two fingers up to the Hulkageddon.

A lot of people killing hulks (mostly) and other industrial-related ships in high-sec. There are prises for most kills and several other achievements.
The aim of it is to have fun for gankers. A lot of whining posts will appear on forums for sure, but the truth is that people are actually interested in Hulkageddon. During Hulkageddon II a PCU record was registered.

Just as a point of interest, an Arazu or Lachesis with a Claymore boosting will get more than 70km from their warp disruptors.
Not that you’ll see a lot of those involved in hisec ganking…

other than that, unless you're really asleep at the wheel theres not that much risk to you if you are mining tbh. pick a quiet system, keep your eye on local, and if some other mining ship is creeping up on you in the belt, its probably one of our scouts, and you should bail.
