NAV = Net Asset Value. It is a combination of an estimated value of all your assets (ships, fittings, items, etc) + the value of your wallet + the value of your buy and sell orders (could be way off from real value if you are trying to sell stuff for obscene prices) that are currently on the market.
The idea is that you can estimate the total amount of cash you would have if you sold all your assets and cancelled all your buy orders (total liquidation).
The reason you would want to track NAV is that it is an easy metric for how much "stuff" you have and how how that value changes over time. If you were to just look at the size of your wallet that value could go way down when you enter a market buy order and could go way up when you sell some stuff on the market. But those changes don't really mean you have more "stuff", you've just changed the type of stuff you have.
I use EveHQ for my ship fitting/skill planning needs, but it also has a module called Prism that enables to you view your total value. I have not heard of NAV before, but the value displayed in EveHQ’s prism is the market value of all your orders and stuff. You just have to remember to untick the blueprint values as they will always be BPO values instead of BPCs. (Find EveHQ at http://evehq.battleclinic.com)
