Once a place achieves a dominance in this area then it is very difficult (at least as individual players) to change as it's status will only attract more players causing it to grow even more.
However, few players will trek all the way to Jita to buy basic stuff. Each area generally has it's own trade hub.
In Minmatar space the biggest trade hub is Rens in the Heimatar region.
In Gallente space the prominent trade hub is in Dodixie.
Not so sure about Amarr space as I don't go there very often (the Amarr don't like me very much due to my destruction of a few too many of their ships) but I think it may be the Amarr system itself - can any Amarr players shed more accurate light on that?
If you are selling general items then really nearly any system will do - I will often be happy to pay a higher price in the station I am in then fly a few jumps just to save a mill or two on a few items. You may sell fewer items but can generally make up for it with a higher margin per item.
Also consider that items for missioners, eg. ammo and drones in particular, then systems with a decent number of agents is a good place to sell.
Need to find trade hubs? Here are some tips:
Ombey's Maps! Google for 'eve_regions.pdf' and you will find this map made by Ombey. It's the standard, everyone gets it very nice and printable. On his map, major trade hubs are marked with a big circle around the hub systems in a region. Very easy visual, not much research required.
Mission hubs = Trade Hubs. Check the Agent Database for locations of Highsec level 4 agents. The systems that have a few L4's or a few L3 and L4 agents are the mission hubs, therefore at least minor trade hubs. In lowsec these types of systems are usually controlled by loose alliances of pirates / pirate-carebear-hybrid corps.
0.0 Ports. Look on the maps for the closest highsec system to 0.0. You will find some like Agil have high traffic, and others may not. Cross reference this with EVE's Starmap showing pilots in space. You will get the picture.
Cosmos and FW areas. Google where the FW areas are, and the Cosmos areas, check Ombey's map. Scout the areas out.
The trick is: Find price disparity between 2 or more hubs, buy cheep, move sell high.

Why its Jita I dont know really. I think because its central.
You can search for Tradespots by using the map. There is a option to mark systems by the numerbs of pilots.
Amarr's trade hub is Amarr. Yes they named a system after their faction, confused me at first.
I think the reason Jita was so loved initially is because A) it's number of Stargates, and B) it is farily easy to get to from most hi-sec locations.
For learning places to trade, there is also lots of miniture trade hubs on boundaries of low/hisec. Also trade hubs tend to appear in convenient locations for players so where the good mineral and ice deposits in hi-sec are, where the system is easy to get to, mission running systems as has been suggested already.
